My name is Harry Krys (now officially Harry Zinsser-Krys) and I am a proud Albertan.  I was born in Lethbridge on December 18, 1957 but lived mostly in Edmonton with my 5 brothers and sisters as my father hopped around the province and NWT building runways for the Department of Transport. I finished my schooling at Eastglen Composite High School in Edmonton in 1975 with the prerequisites to attend university.  I started a plumber´s apprenticeship in the summer of 1975 just after high school so I could put myself through Business school at the University of Alberta. Dad told us that he put himself through university and we had to do the same to learn the value of labour and money! The apprenticeship provided me with summer jobs until I graduated with a B.Comm. in 1980. I trained and then received a Class 1 Driver´s Licence in the summer of 1980 to enable me to transport farm and heavy equipment between our Edmonton farm and the Spirit River homestead. Following a year at the City of Edmonton (Finance Department) I was accepted into law school at Queen´s University in Ontario graduating with an LL.B. in 1984. Returning to Calgary, I articled with Fenerty Robertson Fraser & Hatch (which merged with Dentons) and was admitted to the Alberta Bar in August of 1985. The following January I married (hence the double name) and moved to Munich, Germany learning enough German within 6 months to start working in the international businesses of my ex-wife´s family, Heidolph Elektro GmbH & CoKG and Heidolph Instruments GmbH & Co KG. I eventually headed those companies from 1994 - 2009. On the many trips home to Alberta, I always looked forward to eating some home grown beef, specially grass-fed and finished beef. There is not much like it in Germany or Europe. After over 30 years in Germany and with the signing of the CETA Trade Agreement, I saw on opporunity: export best quality grass-fed and finished  beef from Alberta to the European Union.

Over the course of bovine and human evolution, the perfect combination of omega 6 (ω-6) and omega 3 (ω-3) contained in beef was 1:1 - ideal for human development. After 75 years of giving cows the wrong feed, grains instead of grass, there has been a dramatic change in the ratio of ω-6 (inflammatory)  and ω-3 (anti-inflammatory) fats consumed in our diet, whereas the omega 6 dominate the omega 3 in conventional beef in a ratio of 15 - 20 :1. The perfect balance of 1:1 has been disrupted. This change to a more inflammatory diet, perhaps more than any other dietary factor, has contributed to the epidemic of modern disease - cancer, coronary heart disease, diabetes and obesity. Grass-fed and finished (GFF) beef  restores this balance and adds additional benefits that beef in the past also contributed to overall human health such as much higher levels of Conjugated Linoleic Acid (CLA), Trans Vaccenic Acid (TVA), anti-oxidants and essential enzymes.

The trend and dietary movement for improved human health is to return to grass-fed and finished beef , as our forefathers knew it. Not only does grass-fed and finished beef (GFF) provide healthy human benefits but GFF also is sustainable (relying solely on grass for feed), environmentally advantageous (improves soil, plant life, water & air quality) and is animal-friendly (low stress in a comprehensive herd).

                         WHY BEEF?

  • Only ruminants, cows, sheep, goats, bison,deer, elk, giraffes and camels, can digest grass and plant based foods. Humans cannot process grass.

 

  • Ruminants are mammals that can acquire nutrients from plants by fermenting them through natural chemical processes. This is done in the Rumen, a large stomach, before it is regurgitated, chewed thoroughly and then digested in a different stomach.

 

  • Over the course of human evolution there has been a dramatic change in the ratio of ω-6 and ω-3 fats (Omega 6 & 3) consumed in our diet. This change, perhaps more than any other dietary factor, has contributed to the epidemic of modern disease.

HUMAN BENEFITS OF GRASS FED & FINISHED (GFF) BEEF*

  (compared to conventional beef)

1. 3 x higher CLA levels  (Conjugated Linoleic Acid - c18:2,c9t11).

2. Higher TVA (Trans Vaccenic Acid – c18:1,t11).

3. Higher ω-3 levels.

4. Same ω-6 levels.

5. Ratio of ω-6:ω-3 is approximately 1:1.

6. SFA (Saturated Fatty Acids)  same but higher proportion of stearic fatty acid (c18:0)

     cholesterol neutral.

7. There are 7x more Vitamin A (beta-carotene) in GFF.

8. There are 3x more Vitamin E (alpha tocopherol) in GFF.

9. There are 2x more anti-oxidant enzymes (Glutathione) and more Superoxide

     Dismutase (SOD) & Catalase (CAT) in GFF.
